At Bodega 1830, we like wine with a bit of character — and Kamara Nimbus Russus has it in spades. This isn’t your standard house red. It’s cloudy, unfiltered, low-intervention, and proudly Greek. And it just so happens to be one of our favourite bottles behind the bar.

So what is it? Let’s get into it.

A Natural Red With Greek Roots

Nimbus Russus comes from Kamara Winery, a small family-run estate near Thessaloniki in northern Greece. They’re known for doing things the old-fashioned way — organic farming, wild fermentation, zero filtering, and minimal sulphur. What you get in the bottle is exactly what nature intended.

It’s made from a blend of Xinomavro and Syrah, two grapes that bring a perfect mix of fruit, spice, and bite. Xinomavro is kind of like Greece’s answer to Nebbiolo — structured, slightly savoury, with those tart red fruit notes. Syrah brings the dark berries and a bit of wild energy. Together? A juicy, earthy, slightly rustic red that’s unlike anything else on the list.

Why We Love It at Bodega

Nimbus Russus is a bit of a rebel. It’s hazy in the glass (thanks to being unfiltered), with a bold nose full of cherry, dried herbs, black pepper, and something just a little wild — that signature “funk” that natural wine lovers chase after.

But for all its personality, it’s incredibly drinkable. It doesn’t overpower the table. It plays nice with food. And it’s the kind of wine that gets people talking.

We’ve paired it with everything from our chargrilled lamb koftas to the tempura aubergine, and it just works. Whether you’re deep into natural wine or trying it for the first time, this bottle is an easy yes.

When to Drink It
